Victory Point Wines - 2012 Cabernet Sauvignon

Margaret River’s 2012 vintage is predicted to be something truly special; with both Chardonnay and Cabernet Sauvignon wines rated outstanding. The extended period of warm weather and cool nights at the end of summer bring about concentrated red currant flavours mixed with mulberry and blueberry aromas in the red varieties. The natural fruit flavours have time to balance off with seed ripeness.

The fruit was picked in small batches from 27th March at 13.1 Baume.

Vinification

On delivery to the winery the whole bunches are destemed in individual batches to open fermenters. The fruit spent 27 days on skins before being pressed and racked to barrel. French oak barrels were used, 50% of which were new. The wine was aged in barrel for 18 months before extensive blending trials were undertaken to determine the composition for the 2012 vintage.

The final blend is made up of 86% Cabernet Sauvignon, 6.5% Malbec, 4.5% Petit Verdot and 3% Cabernet Franc

"Hand-picked, open-fermented, 27 days on skins, 18 months in French oak (50% new), when 6.5% malbec, 4.5% petit verdot and 3% cabernet franc were blended in. The time on skins has increased the tannin level significantly, but it remains in balance with the complex and intense suite of black fruit flavours. A carefully assembled wine with a great future. "
