2015 Cabernet Sauvignon

 Cabernet Sauvignon Cheese Board

Victory Point Cabernet Sauvignon

Vintage 2015 growing season was historically warmer than average, with a cool drizzly weather pattern over flowering. Overall rainfall was similar to 2014 with a dry stretch from October to March. Bird pressure was stronger than usual as the Marri blossom did not flower until after harvest. Nets were fitted and moved to cover the fruit but fruit was sacrificed and yields were below average.

The fruit was picked on 27th March, 2015 at 13-14.5 Baume.

Vinification

The fruit was hand plunged in small batch open top fermenters with a total of 10 days on skins to achieve a brightly fruited wine with good flesh and a refined tannin profile. French oak barrels were used, 40% of which were new. The wine was aged in barrel for 16 months before extensive blending trials were undertaken to determine the composition for the 2015 vintage. The final blend is made up of 87% Cabernet Sauvignon and 11% Petit Verdot and 2% Malbec.
The wine was bottled in October 2016 and sealed under screwcap closure.

Tasting Notes

Very appealing fruit characters on the nose of blackcurrant/cassis, raspberry, red cherry and mulberry along with fragrant vanilla and spice from the French oak. The palate flows with red blue and black fruits framed by silky tannins some creamy vanilla and a long satisfying finish. Cellaring potential of at least 10 years.

Deep red colour with a brick-red tint and lacks purple tints now. The bouquet is similarly showing some development and has a savoury, forward-developed nature. It’s starting to show some attractive aged development. Soy, nori and blackberry, with spice and earthy tinges. It’s a very good drink: not overly polished but generous and robust with heaps of character. It’s starting to drink beautifully now – 2034.

Blackcurrant inky with tobacco and lifted herbs. A serious wine with gravelly tannin made in a refined style. Classic and elegant with lovely layers.
